he winter seasons reminds me of my mom making most awesome Gajar Ka Halwa dessert. Gajar Ka Halwa is a carrot based sweet dessert pudding which is very rich, creamy, tasty with goodness of milk, nuts, sugar, ghee and natural sweetness of carrots. The dessert is traditionally eaten during all of the festivals in India, and it is served hot during the winter.

This is one of the easy and tasty dessert recipes which can be prepared and attempted by any enthusiastic cook.

Carrot Halwa / Gajar Ka Halwa

Ingredients

  • Carrots – 1.5 kg

  • Sugar – 10-15 tbsp

  • 10 cashew / kaju, chopped

  • 10 almonds / badam, chopped

  • 10 Pista chopped

  • 1 glass of Milk

  • 3-4 tbsp Ghee

  • ¼ tsp Cardamom Powder

Directions

  • firstly, peel the skin of carrot and grate carrots using hand-held grater.
  • In a large kadai heat ghee.
  • You can fry almonds, cashews, pista in low medium heat.
  • Fry until it turns golden brown. keep aside
  • In the same ghee add grated carrot and saute well.
  • Cook it for 10-15 min.
  • Once water gone from the carrots add milk and give a good stir.
  • Cook it for 10 min.
  • continue to boil until the carrots are cooked well and milk reduces.
  • once the milk thickens completely, add sugar
  • mix well & cook until the sugar dissolves.
  • now add fried nuts and cardamom powder.
  • mix well make sure everything will be combined.
  • gajar ka halwa is ready. keep aside for cool down.
  • You can serve warm or chilled.
