This is a simple salad with the goodness of carrot and moong dal in one.This salad is typical south indian salad.Its easy to make and healthy too.This is popular among house holds in Karnataka. In Karnataka we called “Hesaru Bele Kosambari”

Its great for weight loss as it has the right amount of nutritions in it.This moong dal salad recipe is quick to put together can be tempered with mustard seeds and curry leaves.Its delicious without tempering too.

Easy to digest, packed with potassium and iron, moong dal is best for breakfast.You can even try different combinations with it.you can add cucumber, carrots, grated coconut, pomegranate, capsicum, tomatoes, sweet corn, soaked chickpeas or even sprouted moong.

I love this sprouts salad so much, and I can eat it every single day for lunch and for dinner too.

Ingredients

  • Soaked Moong Dal – 1 cup

  • Chopped Onion – 1 cup

  • Chopped Tomato- 1 cup

  • Salt as per taste

  • Carrots – 2

  • Chopped Coriander

  • Lemon Juice – 1 tsp

  • Chopped Green Chilies – 1 tsp

  • Crushed Black Pepper – 1 tsp [Optional]

  • Pomegranate Pearls [Optional]

  • Cucumber – 1 cup [Optional]

  • FOR TEMPERING:
  • Oil – 1 tsp

  • Mustard Seeds- 1 tsp

  • Curry Leaves

Directions

  • Rinse moong dal in cold water, add 1 ½cup of water to the dal and let it soak for an hour minimum.
  • Meanwhile, wash and peel the carrots, grate carrot using hand held grater.
  • After an hour, drain the moong dal set aside.
  • To the soaked dal, add onions, add tomatoes, grated carrot,Chopped chilies, green mango ( or lemon juice), salt and coriander leaves.
  • TO DO THE TEMPERING: In a small pan heat the Oil and add the mustard seeds.
  • When the mustard pops, add curry leaves.
  • Add the tempering to the salad.
  • Mix it well and rest for ten minutes, taste and adjust the seasoning.

Notes

  • You can add a grated raw mango, lemon can be avoided if using raw mango.
  • If children are being served the kosambari, do not add finely chopped green chilies.
  • Tempering is optional. You can serve the salad without tempering too.

Directions

  • Drain the soaked moong dal, Once the water is fully drained, place the moong dal in a large bowl.
  • Wash and peel the carrots, grate carrot using hand held grater.
  • Mix soaked moong dal with the chopped onion, tomato , cucumber, coriander leaves and green chili. Add salt to taste and a tablespoon of freshly squeezed lime juice.
  • Take a non-stick pan add 1 tsp of oil , mustard seeds, let them splutter.
  • When the mustard pops, add curry leaves.Add the tempering to the salad.
  • Mix it well and rest for ten minutes, taste and adjust the seasoning.
