Cherry fluff salad is one of my favorite cherry recipe. I made this salad in indian style, Instead of marshmallows i used butterscotch for nuttiness. This is perfectly sweet ,pretty and pink! You just need few ingredients to make this salad. This salad is one of my favorite no bake dessert recipes!
Cherry Fluff is a great dessert to prepare anytime of year but is especially fun for Valentine’s Day and Christmas.This salad will bring smiles to your guests face and will also have them asking you for the recipe later.

Fresh Cherries – 1 cup
Sugar – 3-4 tbsp
Raisins – 1 tbsp
Chopped cashew nuts – 1 tbsp
Chopped almonds – 1 tbsp
Chopped pista – 1 tbsp
Condensed milk – 1 can
Whipping Creme – 473 ml
Pineapple chunks [ Drain water ] – 1 cup
STEP 1 : MAKING CHERRY JAM
- Remove seeds from cherries.
- Chop the pitted cherries into little chunks.
- Place cherries in a pan and add some water.
- Add sugar and saute well.
- Bring this whole thing to a boil.
- This will take around 15-20 minutes to cook.
- Push it using your fingertip from one corner, and if the jam is set, it will wrinkle. If it doesn’t then cook the jam for few more minutes and repeat the test.
- Once its done keep in refrigerator for 10-15 min .
- STEP 2: PREPARATION OF BUTTERSCOTCH
- Add sugar in a pan on medium heat. Chop cashews and almonds and keep them ready.
- Sugar will first be all clumpy but then it will melt in a smooth liquid.
- As soon as sugar melts and caramelizes in golden brown, add the nuts to it.
- Be very careful here, the caramelized sugar is too hot.
- Also sugar can burn very quickly once it’s melted so as soon as it caramelized stir in the nuts and remove from heat.
- Transfer the sugar nut mixture onto a parchment paper or greased oil dish and let it cool down. once its cool break it into pieces.
- STEP 3: MAKING OF CHERRY FLUFF
- In Kitchen Aid bowl [ You can use hand mixer] take whipping cream.
- Whip it until it becomes soft peaks.
- Mix cherry jam into whipped cream, then add pineapple chunks, condensed milk, nuts and course butterscotch into the creme.
- Mix it well. cover the bowl and keep in refrigerator before serve.
