I made this dessert on mother’s day.Celebrated her love in luxury and elegance with exotic Pista Barfi Sevai Kheer. Sevai Kheer or sweet vermicelli is one of the simplest delights ❤️.
There are various versions of Kheer. You can make it easily with full cream milk with lots of nuts. The recipe i have used has traditional methodology in which the milk is reduced in a large thick bottomed pan in slow heat.
I am a follower of a kunal Kapur recipes and I came across one of his best dessert recipe which represents love for mother, so I thought to try the desert and feel my mom happy on this special occasion. Friends do try this recipe at home.

Ingredients
2 Cup of Fat Milk
Pista Barfi
1 tsp of Pista
1 tsp of Cashewnuts
1 tsp of Almonds
1 tsp of Cardamom Powder
2 tsp of Sugar
Rose Water [Optional]
2 tsp of Ghee
Sevai
Edible Flower [for garnish]
Mango Cubes [for garnish]
Blueberries [for garnish]- optional
Powdered Sugar-[for garnish]
Directions
- Heat the pan and add 2 cup of Fat Milk.
- Once the milk starts boiling, add 3 pista barfies into the milk then add crushed almonds, cashewnuts, pista, cardamom powder, sugar, rose water drops.
- Keep stirring in regular intervals just to avoid milk getting burnt from bottom.
- Mix it well and keep the gas flame medium and let the milk reduce. This may take 30-35 mins or even more.
- Once the milk reduced kepp aside for cool down.
- In pan add ghee and roast sevai. Shallow fry until it turns into golden brown color.
- Once its turn brown take it off and remove excess ghee from it. Then transfer to tissue paper.
Directions of serving deseert
- Take serving glass and add 1/4 tsp of kheer.
- Then add shallow fried sevai on kheer.
- For garnish use almonds, cashewnuts, pista, mango cubes, eblible flower [rose petals] , blueberries and sprinkle some powdered sugar on top of the kheer.

- Crush the bottom part of sevai using spoon. Sevai will disolve into the kheer..
