Chicken Handi is popular dish in non veg gravy recipes. Aunthentic Chicken Handi is usually made in earthenware pot. Now a days it’s very hard to cook in a earthen pot on a gas so I am cooking in regular pan. This chicken handi is spicy in taste and has full of flavors. It is served with hot steamed rice or any Indian bread. My mother is a big fan of Sanjeev Kapoor’s and she is to watch “Khana Khazana” (Indian cookery show) which is hosted by Sanjeev Kapoor. This recipe is from one of his show. As my dad loves a chicken lot, so my Mom taught to try this recipe and it was so tasty. I still remember the taste and feel the flavour smell, when my mom is to serve this chicken handi with hot roti(bread). Ingredients for marination

  • 1 kg Chicken.

  • 4 tsp of Curd.

  • 1 tsp Lemon juice(Optional).

  • 1 tsp Chili powder.

  • 1 tsp of Garam Masala.

  • 1 tsp of M.D.H Chicken masala.(You can use any store masala).

  • 1 tsp of Coriander Powder.

  • 2 tsp Oil.

  • 1 tsp of Salt.

  • 1 tsp of Ginger Garlic paste.

Ingredients for Gravy

  • 3 tsp of Oil.

  • 1 Chopped Onion.

  • 2 Chopped Tomatoes.

  • 1 tsp of Ginger-Garlic paste.

  • 1 tsp of Kashmiri Red chili powder.

  • 1 tsp of Turmeric Powder.

  • 2 cup of Water.

  • 1 tsp of Sugar.

  • 1 tsp of Kasuri Methi.

  • Pinch of salt.

Directions of marination

  • Take 1 kg chicken in bowl and wash it really good.
  • Add Curd, Ginger-garlic paste,Coriander powder,Turmeric powder,Lemon Juice, Salt,Garam masala, Chicken masala, oil,Chili powder and mix well.
  • Keep this Bowl in refrigerator for 1 hr.
  • After 1 hr bake the chicken into the oven for 10 min.

Preparation of gravy

  • Heat up oil in a large pot.When oil is enough hot add onion and fry it for about 6-7 minutes on medium heat.
  • Once the onions turns into golden brown color add Ginger garlic paste, saute until raw smell of ginger garlic goes away.
  • Then add chili powder,turmeric powder.mix it well.
  • Add tomatoes and sauce until tomatoes turns into mashy.
  • Add baked chicken and mix it well.
  • Add salt and mix well. Add salt carefully as we have already added salt while marinating the chicken, then add water.
  • Cover with a fitting lid and cook on very low heat for about 15 minutes.
  • Turn off the gas and handi chicken is already.
  • You can serve this handi chicken with naan, roti or bhakari.
