Veg Fried Rice is a Indo-Chinese street food..Most of the people love Indo-Chinese Food. This snapshot took from last night dinner which is prepared by my husband based on my instruction(he asked me too add this and wanted to credit to me also, so nice off him ). This veg fried rice recipe has a lots of vegetables like carrot, peas, bell paper, cabbage with some soya sauce and green chili sauce. Its delicious veg fried rice. Fried rice is one of the most nostalgic dishes from my childhood and also love to have it specially when my hubby prepare it. When my family goto to the restaurant they definitely order the veg fried rice.It taste great when served with Manchurian gravy.

INGREDIENTS FOR VEG FRIED RICE

  • 2 teaspoons of Oil.

  • 1 small onion, finely chopped (about 1 cup).

  • 2 medium carrots, finely chopped (about ½ cup).

  • 2 cups of Chopped Bell Paper,Onion Leaves,Peas,Cabbage.

  • ¼ teaspoon salt, add as per taste.

  • 1 tablespoon grated or finely minced fresh ginger.

  • 2 large cloves garlic, pressed or minced.

  • Pinch of red pepper flakes

  • 2 cups cooked rice.

  • 1 tablespoon soy sauce.

  • 1 tablespoon Green Chili sauce.

  • For Garnishing:- Onion Leaves,Coriander Leaves,Slice of Onions.

PREPARATION STEPS

  • Take 4 Cups of Rice and soak it for at least 15 min & Drain the water.
  • Bring 8 to 10 cups of water into large pan and Boil this water for 10 min.
  • Add the rice and pour 1 tsp oil to prevent from stickiness.Then add some salt into the boiling rice.
  • Cook the rice till to be grainy. Don’t overcook rice
  • Once its 80% cooked,Drain all the water from rice and cool it completely.
  • Put 1 tablespoon of the oil in a pan, and turn heat to high. Once the oil heat put Chopped Garlic, onion, bell pepper, peas, cabbage and carrots and cook, stirring occasionally, until softened and beginning to brown, 5 to 10 minutes.
  • Add soya sauce, chili sauce and Chilli Flakes for indo-chinese flavor.
  • Add some salt according to your taste.
  • Add Fried rice and fry them for 15 min.
  • Garnish Veg Fried Rice with slice of onions and onion leaves.
