Lima beans and eggplants are one of my all time favorite vegetable combinations.It is a real comforting, but also a healthy. This pavta [Lima beans] is very high in protein and fiber but low in fat.
Lima beans have a velvety texture and rich, savoury, almost buttery flavour. Lima bean and brinjal curry goes well with rice, roti or paratha.
I am sharing my whole process of making Lima beans and brinjal curry /subji recipe.

Oil- 1 tsp
Cumin Seeds- 1 tsp
Mustard Seeds- 1 tsp
Brinjal – 2
Pavta [Lima Beans] – 1 cup
Chopped Onion – 1 cup
Ginger-Garlic paste – 1tsp
Chili Powder- 1 tsp
Coriander Powder- 1 tsp
Pinch of turmeric powder
Chopped tomatoes – 1 cup
Water – 1/2 cup
Salt as per taste
Garam Masala – 1 tsp [Optional]
Chopped Coriander leaves
Directions
- Shell the beans and wash thoroughly. Cut the eggplant in cubes.
- First heat oil in a pan.
- Once oil is heated add cumin and mustard seeds.let them crackle.
- Add chopped onion and saute till they turn soft and translucent.
- Now add ginger-garlic paste and saute well.
- Then add chopped brinjal and peeled pavta. mix it well. shallow fry for 4-5 min.
- Add chili powder, coriander powder and turmeric powder into the pan. mix it well.
- Add chopped tomatoes.
- Add half cup of water and salt into the bhaji. mix it well and cook it for 10 -15 min.
- Then add garam masala. cover the pan for a 5 min.
- Brinjal pavta bhaji is ready to serve. garnish with coriander leaves.
