Vegetable Saagu is most popular breakfast recipe in Karnataka.When I was in Bengaluru I had Vegetable saagu with set dosa and it was so good.There are many varieties of making veg saagu. I am sharing authentic vegetable saagu recipe from Karnataka style.This vegetable saagu is a combination of vegetables, blend of spices and coconut gives nice creamy texture to the curry. Vegetable saagu perfectly goes with set dosa, idli, poories and Steamed rice.do try this recipe at home and enjoy your morning breakfast.

Vegetable used for gravy.

  • 1 Potato.

  • 1 cup cauliflower.

  • Fresh beans.

  • 1 Capsicum( bell pepper).

  • 1 cup Fresh Peas.

  • 4-5 Carrot pieces.

Ingredients for gravy.

  • 1 cup Sliced Coconut.

  • 2-3 Mint leaves.

  • 1 inch Ginger.

  • 3-4 Garlic.

  • 1 chili.

  • 2 tsp of Roasted Gram Daal (channa dal).

  • 1 cup Chopped Tomatoes.

  • Fresh Coriander.

Other Ingredients

  • 2 tsp of Oil.

  • 1 tsp Cumin Seeds.

  • Curry Leaves.

  • 1 Chopped Onions.

  • 1 tsp of Red chili Powder.

  • 1 tsp of Coriander Powder

  • Garam Masala.

  • Salt as per taste.

  • 2 cup Water.

Step 1: Boiling vegetables

  • First we need to boil mixed vegetables.In cooker add 2 cups of water and add vegetables.then add salt and turmeric powder.
  • Give only one whistles. Don’t boil vegetables more than 1 whistle.

Step 2: Maling Masala for saagu.

  • Take 1 cup sliced coconut, coriander leaves, ginger ,garlic ,Roasted channa daal ,1 cup chopped tomatoes, 1 chili ,mint leaves.
  • Add Everything in a grinder jar along with 1 cup water.
  • Grind the masala in fine paste.keep aside.

step 3: preparation of making saagu.

  • Heat 2 tsp of oil in a cooker.add cumin seeds, curry leaves and 1 chopped onion.once onions turns into golden brown color add coriander powder, red chili powder.mix it well.
  • cook for 2-3 min.After that add grinder masala.stir it well.
  • Then add cooked vegetables into the cooker.Add water according to the gravy.gravy should be thick.Add Garam Masala and salt then cook it for 10 min.
  • Serve this hot vegetable saagu with idli, set dosa or poories.
